30 Veggie Taco Recipes to Make Your Day Happier

Tacos are life. 

Whether you’re a vegetarian or just want to eat more produce, tacos are an excellent delivery mechanism for veggies (and fruit).   

And if you don’t like to cook, you’re in luck!  These recipes are easy (they’re more assembling and heating than “recipes”) and come together quickly when you’re hungry. 

An important note about tortillas:  corn are technically the healthiest, but I’ll be honest – I hate corn tortillas.  I much prefer flour ones.  And fortunately I found some options that are high fiber and still taste great (plus they’re small, meaning your tacos are more filling and less tortilla.  I’m very particular about the filling/tortilla distribution ratio).

So here are 30 recipes for veggie tacos, grouped into traditional, creative, and groundbreakingly unique.  And look how easily you can knock off both Meatless Monday and Taco Tuesday… 

Let’s start with 10 traditional veggie tacos.

1. Spicy Cauliflower Tacos

Ingredients: Cauliflower florets, taco seasoning, olive oil, lime juice, cilantro, avocado, and salsa.

Instructions: Toss cauliflower with taco seasoning and olive oil. Roast until tender. Assemble tacos with roasted cauliflower, avocado slices, salsa, and a sprinkle of cilantro. Serve with lime wedges.

2. Black Bean and Sweet Potato Tacos

Ingredients: Sweet potatoes, black beans, cumin, chili powder, garlic powder, tomatoes, red onion, and cilantro.

Instructions: Roast sweet potatoes with spices until tender. Mash black beans with spices. Assemble tacos with mashed beans, roasted sweet potatoes, diced tomatoes, red onion, and cilantro.

3. Grilled Zucchini Tacos

Ingredients: Zucchini, bell peppers, red onion, olive oil, taco seasoning, lime juice, feta cheese, and fresh cilantro.

Instructions: Grill zucchini, bell peppers, and red onion with taco seasoning until charred. Assemble tacos with grilled veggies, crumbled feta cheese, lime juice, and cilantro.

4. Avocado and Chickpea Tacos

Ingredients: Chickpeas, avocado, cherry tomatoes, red cabbage, lime juice, cumin, paprika, and sour cream.

Instructions: Mash chickpeas with avocado, lime juice, cumin, and paprika. Assemble tacos with mashed chickpea-avocado mixture, sliced cherry tomatoes, red cabbage, and a dollop of sour cream.

5. Mushroom and Spinach Tacos

Ingredients: Mushrooms, spinach, garlic, olive oil, cumin, chili flakes, diced avocado, salsa verde, and queso fresco.

Instructions: Sauté mushrooms and spinach with garlic, cumin, and chili flakes until cooked. Assemble tacos with sautéed mushrooms and spinach, diced avocado, salsa verde, and crumbled queso fresco.

6. Tempeh Tacos

Ingredients: Tempeh, soy sauce, lime juice, garlic, chili powder, shredded lettuce, diced tomatoes, and vegan cheese.

Instructions: Marinate tempeh in soy sauce, lime juice, garlic, and chili powder. Sauté until crispy. Assemble tacos with tempeh, shredded lettuce, diced tomatoes, and vegan cheese.

7. Jackfruit Tacos

Ingredients: Jackfruit, BBQ sauce, olive oil, red onion, cilantro, lime wedges, and avocado.

Instructions: Sauté jackfruit with BBQ sauce until tender. Assemble tacos with BBQ jackfruit, sliced red onion, avocado slices, cilantro, and a squeeze of lime.

8. Roasted Vegetable Tacos

Ingredients: Assorted vegetables (bell peppers, onions, carrots), olive oil, taco seasoning, guacamole, salsa, and lime wedges.

Instructions: Roast assorted vegetables with olive oil and taco seasoning until caramelized. Assemble tacos with roasted vegetables, guacamole, salsa, and lime wedges.

9. Tofu Scramble Tacos (i.e. vegan breakfast tacos)

Ingredients: Firm tofu, turmeric, nutritional yeast, olive oil, spinach, salsa, and avocado.

Instructions: Crumble tofu and sauté with turmeric and nutritional yeast until scrambled. Add spinach and cook until wilted. Assemble tacos with tofu scramble, salsa, and sliced avocado.

10. Eggplant and Hummus Tacos

Ingredients: Eggplant, hummus, cherry tomatoes, cucumber, olives, feta cheese, and tzatziki sauce.

Instructions: Roast eggplant until tender. Assemble tacos with hummus spread, roasted eggplant, cherry tomatoes, cucumber, olives, crumbled feta cheese, and a drizzle of tzatziki sauce.

Ingredients: Cauliflower florets, cocoa powder, chili flakes, cinnamon, olive oil, lime juice, avocado, and pomegranate seeds.

Instructions: Toss cauliflower with cocoa powder, chili flakes, and cinnamon. Roast until tender. Assemble tacos with chocolate-infused cauliflower, avocado slices, pomegranate seeds, and a sprinkle of lime juice.

2. Blueberry and Black Bean Tacos

Ingredients: Black beans, blueberries, feta cheese, mint leaves, red onion, balsamic glaze, and lime zest.

Instructions: Mash black beans with blueberries and feta cheese. Assemble tacos with the bean-blueberry mixture, mint leaves, thinly sliced red onion, a drizzle of balsamic glaze, and lime zest.

3. Peanut Butter and Grilled Zucchini Tacos

Ingredients: Zucchini, peanut butter, soy sauce, sriracha, lime juice, crushed peanuts, and cilantro.

Instructions: Grill zucchini with a peanut butter, soy sauce, and sriracha glaze. Assemble tacos with grilled zucchini, crushed peanuts, cilantro, and a squeeze of lime.

4. Coconut Curry Chickpea Tacos

Ingredients: Chickpeas, coconut milk, curry powder, turmeric, shredded coconut, mango salsa, and cilantro.

Instructions: Simmer chickpeas in coconut milk with curry powder and turmeric until creamy. Assemble tacos with coconut curry chickpeas, shredded coconut, mango salsa, and fresh cilantro.

5. Truffle Mushroom and Spinach Tacos

Ingredients: Mushrooms, spinach, truffle oil, garlic, olive oil, vegan parmesan cheese, and microgreens.

Instructions: Sauté mushrooms and spinach with truffle oil and garlic until cooked. Assemble tacos with truffle-infused mushrooms and spinach, vegan parmesan cheese, and microgreens.

6. Watermelon BBQ Jackfruit Tacos

Ingredients: Jackfruit, watermelon cubes, BBQ sauce, pickled red onions, cilantro, and lime wedges.

Instructions: Sauté jackfruit in BBQ sauce until tender. Assemble tacos with BBQ jackfruit, watermelon cubes, pickled red onions, cilantro, and a squeeze of lime.

7. Sushi-Inspired Tofu Tacos

Ingredients: Firm tofu, nori seaweed strips, sushi rice, soy sauce, avocado, wasabi mayo, and pickled ginger.

Instructions: Marinate tofu in soy sauce and grill until crispy. Assemble tacos with grilled tofu, sushi rice, nori strips, avocado slices, a drizzle of wasabi mayo, and pickled ginger.

8. Caramelized Pineapple and Eggplant Tacos

Ingredients: Eggplant, pineapple slices, brown sugar, olive oil, cotija cheese, jalapeño slices, and cilantro.

Instructions: Roast eggplant and caramelized pineapple slices with brown sugar until golden. Assemble tacos with caramelized eggplant and pineapple, crumbled cotija cheese, jalapeño slices, and cilantro.

9. Raspberry Chipotle Tempeh Tacos

Ingredients: Tempeh, raspberry jam, chipotle peppers in adobo sauce, lime juice, slaw mix, and pepitas.

Instructions: Sauté tempeh with raspberry jam and chipotle peppers until glazed. Assemble tacos with raspberry chipotle tempeh, slaw mix, and toasted pepitas.

10. Mango Habanero Hummus Tacos

Ingredients: Hummus, mango habanero salsa, grilled eggplant slices, avocado, cilantro, and lime wedges.

Instructions: Spread mango habanero salsa and hummus on tortillas. Assemble tacos with grilled eggplant slices, avocado slices, fresh cilantro, and a squeeze of lime.

1. Mango Coconut Curry Tofu Tacos

Ingredients: Firm tofu, mango chunks, coconut milk, curry paste, shredded coconut, fresh cilantro, and lime wedges.

Instructions: Pan-sear tofu cubes until crispy. Simmer mango chunks in coconut milk and curry paste until soft. Assemble tacos with tofu, mango coconut curry, shredded coconut, cilantro, and a squeeze of lime.

2. Strawberry Avocado Black Bean Tacos

Ingredients: Black beans, strawberries (diced), avocado slices, feta cheese, mint leaves, and balsamic reduction.

Instructions: Mash black beans and layer onto tortillas. Top with diced strawberries, avocado slices, crumbled feta, mint leaves, and a drizzle of balsamic reduction.

3. Peanut Butter Banana Tempeh Tacos

Ingredients: Tempeh strips, peanut butter, bananas (sliced), honey, crushed peanuts, and chili flakes.

Instructions: Grill tempeh strips with a peanut butter glaze. Assemble tacos with tempeh, sliced bananas, a drizzle of honey, crushed peanuts, and a sprinkle of chili flakes.

4. Caramelized Pineapple Jalapeño Tacos

Ingredients: Caramelized pineapple chunks, pickled jalapeños, cotija cheese, lime zest, and fresh cilantro.

Instructions: Sauté pineapple chunks until caramelized. Assemble tacos with caramelized pineapple, pickled jalapeños, crumbled cotija cheese, lime zest, and cilantro.

5. Blueberry Basil Goat Cheese Tacos

Ingredients: Blueberries, fresh basil leaves, crumbled goat cheese, honey, walnuts (chopped), and balsamic glaze.

Instructions: Mash blueberries with fresh basil. Assemble tacos with blueberry basil mixture, crumbled goat cheese, chopped walnuts, a drizzle of honey, and balsamic glaze.

6. Watermelon Mint Salsa Tacos

Ingredients: Diced watermelon, fresh mint leaves, feta cheese, lime juice, and black sesame seeds.

Instructions: Mix diced watermelon with chopped mint leaves. Assemble tacos with watermelon mint salsa, crumbled feta cheese, a squeeze of lime juice, and black sesame seeds.

7. Ginger Teriyaki Eggplant Tacos

Ingredients: Sliced eggplant, ginger teriyaki sauce, sesame seeds, pickled cucumber, and green onions.

Instructions: Grill eggplant slices with ginger teriyaki sauce until tender. Assemble tacos with grilled eggplant, pickled cucumber, sesame seeds, and chopped green onions.

8. Chocolate Chili Sweet Potato Tacos

Ingredients: Roasted sweet potatoes (cubed), dark chocolate shavings, chili flakes, queso fresco, and fresh cilantro.

Instructions: Roast sweet potatoes with chili flakes until caramelized. Assemble tacos with roasted sweet potatoes, dark chocolate shavings, crumbled queso fresco, and cilantro.

9. Lemon Poppyseed Avocado Tacos

Ingredients: Sliced avocado, lemon zest, poppyseeds, arugula, honey, and sliced almonds.

Instructions: Layer sliced avocado on tortillas. Sprinkle with lemon zest and poppyseeds. Assemble tacos with arugula, a drizzle of honey, and sliced almonds.

10. Raspberry Chipotle Mushroom Tacos

Ingredients: Sliced mushrooms, raspberry chipotle sauce, sliced radishes, queso fresco, and microgreens.

Instructions: Sauté mushrooms with raspberry chipotle sauce until glazed. Assemble tacos with raspberry chipotle mushrooms, sliced radishes, crumbled queso fresco, and microgreens.
